The step by step process
It starts with cutting the flower scapes, drying the bulbs in the sun and drying them in the shade. Then comes the most fascinating phase: braiding seven or thirteen bulbs into “reste” according to local tradition. Flavors, tools and stories
You will learn how to use the leaves and the vinca (flexible stem), to recognize the right point of tying, and to store the braids correctly. During the activity, they will tell you anecdotes about the cultivation, historical and gastronomic uses of this garlic: a journey between agricultural memory and taste.
