Network of Red Garlic Producers of Proceno

The “Tradition and Belonging” Business Network was established in Proceno, in the province of Viterbo, with the aim of protecting and promoting one of the symbolic products of the area: Red Garlic of Proceno. This is a local variety that has been selected over time by local farmers, known for its intense aroma, long shelf life and unique organoleptic qualities, the result of the hilly environment and clay-rich soils of the area.

What we do

The Network brings together farms in the municipality of Proceno, committed to preserving the authenticity of local red garlic.
The main objectives of the Network are:

• to protect the origin and quality of Red Garlic of Proceno;
• to ensure traceability and transparency in all stages of the supply chain, from sowing to sale;
• to prevent the misuse of the name “di Proceno” by non-authentic products;
• to promote traditional agricultural knowledge and local production.

In addition to the traditional braids of garlic, some producers have launched a line of processed products using garlic scapes (locally called "talli"), creating high-quality preserves, sauces, and creams.
