Azienda Agricola Loraiano Bambini
In the heart of Upper Lazio, the Azienda Agricola Loraiano Bambini represents one of Proceno's historic farming realities. For generations, the Bambini family has preserved and passed down the art of cultivating Proceno’s Red Garlic, a native variety known for its intense aroma, strong flavor, and excellent natural preservation qualities. Grown at about 400 meters above sea level, in clayey hill soils, the Red Garlic is cultivated entirely by hand, from sowing to harvesting, following sustainable methods that respect biodiversity. The absence of herbicides, minimal use of chemical fertilizers, and natural drying ensure high quality. Preservation occurs through the traditional braid weaving technique, a symbol of ancient and authentic knowledge. Since 2011, the company has adhered to the Production Specifications for Proceno’s Red Garlic, ensuring traceability and product protection. Among the specialties offered are garlic scape preserved in oil and garlic cloves in oil, available fresh in May, as well as other artisan preserves.
